4. Combine Dry Ingredients

In a separate bowl, whisk together the flour, baking soda, and salt. Gradually fold the dry ingredients into the wet mixture until fully incorporated.

5. Form the Cookies

Scoop out 2 tablespoon-sized portions of dough and roll them into balls. I normally use an ice cream scoop for this task, each ball weighing around 50 grams. Place them on the prepared baking sheet, leaving space between each cookie.

6. Optional Decoration

For extra crunch, press chopped peanuts onto the tops of the cookies. Alternatively, make a classic peanut butter cookie pattern by pressing a fork in a crisscross shape. (Tip: Dip the fork in sugar to prevent sticking.)

7. Bake

Bake for 10 minutes, or until the edges turn golden brown. The centers may look soft, but will firm up as they cool. For crispier cookies, bake for an additional 2-3 minutes.

8. Cool & Enjoy

Let the cookies rest on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Ingredients

  • 110 g Unsalted butter 1 stick
  • 240 g Smooth peanut butter 1 cup
  • 260 g Brown sugar 1 1/4 cups packed
  • 1 Egg
  • 2 tsp Vanilla extract
  • 180 g All purpose Flour 1 1/2 cups
  • 1 tsp Baking soda
  • ½ tsp Salt
  • 60 g Unsalted roasted chopped peanuts 1/2 cup

Instructions

  • Whisk the soft butter together with the peanut butter and sugar until it looks light and fluffy.
  • Add the vanilla and the egg and beat until combined.
  • Sift the flour with the baking soda and salt and add to the mixture along with the chopped peanuts. Mix until combined.
  • Scoop the dough, form balls with your hands and press each one slightly. (each ball 50- 60 g) on a baking sheet lined with parchment paper. You can sprinkle each cookie with some extra chopped peanuts beforbaking.
  • Bake in a preheated oven at 180 ° C or 350°F for 12-15 minutes, until the edges look slightly golden.
